Plate fish are named for their flat shape, with both eyes on one side of their head. These eyes are the primary resaon this species of fish is farmed: they are popular in salty dishes and are similar to an olive in both their flavour and texture. It is extremly easy to differentiate male and female plate fish from one another, as the male will have bright yellow stripes along their dominant side. (Yes, dominant side! Some plate fish have faces on their left side, while others have it on their right.)
